Making Unleavened Bread

Ingredients: Flour, Salt, Water
- 2 cups all-purpose flour
- 1 teaspoon sea salt
- 1 1/4 cup water
Steps
- Mix the flour and salt together in a mixing bowl.
- Get a timer ready to start an 18 minute timer
- Preheat griddle or electric skillet over medium-to-high heat.
- Start the timer for 18 minutes, and start the next step immediately.
- Add the water to mixing bowl and mix by hand or with a wooden spoon, until a shaggy mass forms (you need a total of 2-3 minutes to do this step).
- Sprinkle a little flour on a work surface and transfer the dough onto it. Knead the dough for 3-4 minutes until it becomes supple and elastic (Use your hands if you want to knead faster).
- Divide the dough into two pieces and roll each piece into a flattened circle 8 inches (20 cm) in diameter and about 1/4 inch (4-5 mm) thick.
- Cook for 60–90 seconds per side, turning it until it’s golden brown. (to make truly 'un-leavened' bread, you should finish cooking the bread before the 18 minute timer goes off)
- To save time, roll out the second piece while the first is cooking, so it’s ready to go immediately after. (This bread will be finished after cooking both sides, however it is a bit crumbly when broken.)
- If you would like it less crumbly, you can bake it in a preheated oven at 400°F for 8–9 minutes. This yields a sturdier bread that does not crumble when cut.
If you're aiming for a more "biblical"/whole-grain version, you could swap in whole wheat flour and add a touch more water (1–2 extra tablespoons per cup of flour) to keep it supple.
